PRESS RELEASE: The SLCC Announces Two Distinguished Indigenous Culinary Events for Cornucopia 2022

(Whistler, BC) The Squamish Lil’wat Cultural Centre (SLCC) this year showcases Lil’wat Nations Sous Chef Maggie Wallace, and Executive Chef Steven Fecho, featuring in two distinguished events: the Sidecut x SLCC x Fort Berens Dinner, and the Signature event: Spo7ez Cornucopia Fall Feast as part of Cornucopia 2022 – Whistler’s Celebration of Food and Drink.

Celebrating the cuisine of the Sea to Sky region – the Sidecut x SLCC x Fort Berens Dinner – taking place November 17, 2022 from 5:30 to 9:00 pm at Sidecut Steakhouse at Four Seasons – is a collaboration with Squamish Lil’wat Culture Centre (SLCC) and Lillooet’s Fort Berens Estate Winery.

Hosted at Sidecut Steakhouse, and featuring SLCC’s Sous Chef Maggie Wallace of the Lil’wat Nation, and Executive Chef Steven Fecho collaborating with SIDECUT Executive Chef Sajish Kumar Das, this exquisite culinary experience celebrates the cuisine of the ancestral territory of the Sk̲wx̲wú7mesh Úxwumixw (Squamish) Nation and Líl̓wat7úl (Lil’wat) Nation, where Whistler resides. Together they have created a multi-course menu that showcases traditional Indigenous ingredients and preparations presented with a contemporary flair. Fort Berens Estate Winery, located in the territory of the St’at’imc Nation feature optional wine pairings for each dish. Showcasing smoked bison carpaccio, scallop tartare, roasted ling cod stars, blueberry dry-aged venison and finishing with a delightful wild-rice and xusem cake with maple ice cream.

The Signature Event: Spo7ez Cornucopia Fall Feast – on November 26, 2022 from 6:30pm to 9:00pm features a culinary journey brought to life through authentic Indigenous cultural sharing, a traditional shared feast and Spo7ez Performers in regalia sharing songs from Sk̲wx̲wú7mesh Úxwumixw (Squamish) Nation and Líl̓wat7úl (Lil’wat) Nation. Cultural Ambassadors take guests a guided tour of the Museum followed by an exquisite long table culinary experience in the Great Hall. Indigenous-inspired cuisine celebrates the fall season with a fresh menu, and a fresh perspective, as part of a culinary series in partnership with Cornucopia.

Hosted at the SLCC, guests experience a blend of culinary and cultural excellence, and can expect to savour new flavours such as cranberry-rosemary bannock, smoked trout, roast bison bavette and blueberry bannock pudding with berry compote and xusem chantilly. The menu will also accommodate vegetarian, vegan, and gluten-free diners. The Spo7ez dinner will be served through buffet stations with long-table seating in the Great Hall, encouraging greater connections between guests, and experiencing an immersive performance.
